Ya, I'm new to this thread - I've been a silent reader and recipient of KS forums for abt a yr.
I used to bake much more frequently when DS was in his kindy and lower pri yrs - one of my \"idealistic\" view when I decided to become a SAHM was to spend quality time doing stuff with him eg. baking, swimming...etc
However, unfortunately, under my \"too good\" care, both DH & DS have ballooned in size! So no choice but to cut down on such \"frills\" in their diet.
Of course, during CNY period, I would still bake cookies to give away to closer relatives and friends. But baking now has become more a \"special occassion\" kind of thing for me. I try to bake for DH, DS, ILs during their b/d, other than these times, practically zilch baking. So need to lurk in threads like these to satisfy my cravings! :love:
also quite a pro in baking since u know how to bake birthdays cakes.
Ok, here goes the recipe, specially type it out for u.
Ingred : 2 eggs
ΒΌ block butter ( 1 block = 250g)
150 g Top flour (I use bake king)
\tΒ½ bottle thickened milk ( I use bulla, bot fr ntuc)
\t100g sugar
\t1 tsp vanilla essence
\tΒΎ tsp baking powder
\tdried mixed fruits
method :
1) beat the 2 eggs with the thickening cream
2) add in sugar, melted butter, vanilla essence, yellow coloring (optional) and beat well
3) sift the flour and baking powder, then fold in the sift flour with a spatula. (do not beat anymore)
4) add in the dried mixed fruits and stir well.
5) bake as usual.
basically u juz mixed all together.
After abt 40 minutes, uβll have a yummylicious mixed fruit Cake. ENJOY!!! :love: -

Hi Augmum, I do bake but haven't recently. Bake too much very fattening.

ya, is fattening, fortunately ,
my whole family still able to accomodate some fats. :lol:

Saw all your postings on baking, and I was so inspired to try. I am an amateur, and decided to try to bake a butter cake. However, the cake raised very high and cracked at the top. Can the masters help me understand why it turned out like that? Did I beat the butter too much?
So embarrassing, cannot even do a simple butter cake. :oops:
Pls help....
probably yr temp is too high, what temp u have set, and for how long ?
or yr oven heat distribution is not even..... -

this afternoon, juz baked a mixed FRUIT CAKE.
this is the easiest and most moist fruit cake i ever baked. (1 st time i try this recipe) :dancing:

metoo, so long it taste goodNot a baking master but one who bakes as a form of stress relief. haha.
We are all also learning. God knows how many failed attempts I've had.
Aside from the cracked top, the cake texture and taste is ok? Personally, I am not so particular about how it looks more on how is the taste.
Anyways, the 1st thought will be the temp of the oven is too high. Cannot follow the temp and baking timing blindly as each oven is different. That said, it takes a few tries to understand your own oven. C

Same here, in my case more to fatten up DS. DD is an ok size. Along the way too bad, DH got fattened up too.
Lucky for me I am not so much into cakes and pastry so not so affected.
And I am a distributor, distribute to my sis and bring to office for my colleagues. That way ensure we don't eat too much and still can afford variety.
