Hi everyone!

I love baking too! Used to bake once a week, and DS1 would bring homemade banana bread, bread, muffins, cupcakes etc. to school. but haven't baked in along time coz I have been too busy, so he's been bringing store bought stuff.

I bought a new mixer a month ago, but it's still sitting in the box...

You gals are inspiring me to whip up something nice! Lots of long week-ends coming up...must plan to use one of those long week-ends for baking!

No worries. Squeezed till q.dry but not totally dry... shd still have juice left. When u combine mixture together, if grated carrot too wet, the cake mixture might have too much \"moisture \", if u think mixture too dry, can then add in some of the extracted juice...agak agak 1st time to get an idea 1st...

Btw, re: coconut milk - I prefer the chilled type which can be found easily fm NTUC. Taste and smell wise definitely beat the tetra pack type...

the chilled type of coconut ?? oh, i know which one u are referring to,
but that one also can't compare with the fresh cococnut.
but agree that...... it's better than the powdered or tetra packed ones.

happy mama, yes i do bake cookies.
the recent ones were chocolate chips cookies juz 1-2 wks ago. and peanut cookies.
(which i think i mentioned a bit on chocolate chip cookies, but dunno which thread)
juz that i din take any photos and post them here as i think they are rather ordinary cookies.
moreover, have been experiencing prob when posting images here. :roll:

Hahaha, I also baked Choc Chip cookies because DD wanted to bring them to school to share with her friends. Didn't post the pictures here.
