        You need exact measurement or rough gauge?


        My MIL thought me her style in estimate, if you want to try.

        Here goes:

        1) Pig’s fore trotter cut into pieces (blanch and set aside)
        2) Old (to taste) and Young ginger (to eat) scrub clean, lightly bashed (skin intact) fry them with sesame oil.
        3) 1 large bottle 陈广泰 (dog face) vinegar and 1 bottle water. (You can dilute further if it’s too sour or if you want more gravy)
        4) Brown sugar and salt to taste


        Method

        1) fry 2 than add 1 and fry till fragrant.
        2) Add 3 and 4. Bring to a boil and simmer till meat is tender

        Voila! your dish is ready to eat. Bon Appetit!

          You may also add hard boil egg. It’s yummy if serve with the gravy.
          Parboil the pig trot before cooking.

            My mom’s recipe is similar to Dasalo’s only that she uses only young ginger if it’s not for confinement, and black sugar. No salt is needed actually.


            I like my black vinegar trotters really sweet. Makes me feel like cooking this tomorrow!

              If you want the sauce even yummier, get the \"shuang liao\" version of that black dog brand. It has a pink label on top that says shuang liao (double the ingredients). The vinegar is thicker and more flavourful than the normal version. Only Sheng Shiong stocks that version.

                My mum prepares this dish even when no one is going through confinement. hahahah


                my dad loved it! and i also remember us making jiao zi when we have this dish and have the dark vinegar as the sauce / vinegar for the jiao zi.

                        I did a variation of this with prime ribs instead. Great for pple who don’t like the pig skin and handling the trotters with "hair". hahah
