      Hi. Adding water will ensure the seasoning is even throughout beehoon. Otherwise you get patches of it on the beehoon. Fry the beehoon until the moisture disappears. For ingredients like egg, can fry separately n put aside and add after the beehoon is dry.

      I usually add chicken broth instead of water but since broth already contains salt, need to season to taste depending on how salty you like your food.
      Oh so before I fry the bee hoon, need to boil it in water with the required seasoning?
      And then drain the water, add ingredients and fry until bee hoon dry?

        Before frying, need to soak hard beehoon from the packet in water for about half hour. Then drain away this water.

        When frying, add water and seasoning then fry. No need to drain the water, after frying for a while bee hoon will dry up. Then add ingredients after beehoon is dried up. Usually I fry ingredients earlier separately and just add on to beehoon.

          Eh, pouring sauce into the bee hoon will not make it too wet?
          I thinking of just frying it with oil, garlic and just the ingredients and of course wee bit of seasoning as well.
          You must not soak bee hoon in cold water for too long. Leave the softening be done by the steaming sauce water in the wok. I have tried many times, always work out perfectly. How much hot water to pour into wok depends on how wet you want your bee hoon. If you are not sure, add 1 cup or 2 and more only if bee hoon still not soft when liquid already dried up. Drizzle oil when liquid dries up then you pour all your cooked ingredients in to mix.

                      I put the dried bee hoon with stock into the microwave oven and cook until the bee hoon is all hydated.

                      Then fry accodingly.
                      Sure sedap!

                        I also asked my mom to make fried beehoon tonite... hahahah


                        She also told me my beehoon broke up into short strands coz I soaked too long. Yes, I am guilty.

                        I will try to fry some by myself next week. Bought the canned pork trotters to cook with it. 🙂
