The other time I cleaned an electric jug with plastic internal with lemon slices. Ended up with a lemon taste in the water. My children did not like the aftertaste.
I agree with Jennifer. Somehow lemon slices gives a funny aftertaste to the water.
I thought my children were fussy. I am ok.
My children do not like to drink the water from PIL's place. Cant figure out what's exactly the problem although PIL claimed that:
1. the kettle is washed
2. the filter system is washed
incoming water pipes??? -
Won’t the acid corrodes the metal coating layer? Acid is useful to clean only ceramic and porcelain utensils, right?

Not sure about that, but I have been doing what was recommended by Zojurushi for years and each time I do that, the internal walls of the airpot look as good as new. I use the same method for my cordless kettle (plastic) too. -

A small amount periodically won't affect the metal, which is stainless steel anyway and less sensitive to corrosion. And citric acid or household vinegar is very mild acid. -

Maybe the water source is different? I don't know about Singapore, but in bigger countries, water in different areas taste different because of the naturally-occurring minerals in the water, even if all meat safety standards. Or is the filter system the same as in your home? Some filter systems do impart a taste (harmless).

can’t trust the tap water anymore after doing some experiments. We use filtered water.

To update, I put in a tablespoon of soda bicarb and 1 lime (no lemon) and boiled the water. The smell and funny taste were almost gone by the next boiling. At least the taste of the water is more acceptable to me now. Smell/taste of the lime is not as strong as lemon I think.
