      Desserts:
Jen, you alw have lots of variety in your dishes. Copying some of your ideas πŸ˜‰ do you plan your menu daily or weekly? I used to do it weekly till no more ideas..

I dun plan weekly or daily. Every night, check out what is left in the fridge/pantry, then think of what to cook the next day. I usu. need not do lunch as the children eat in school. So, only need to crack my brain juice for dinner. heng ah πŸ˜‰

During the sch hols when I need to cook 2 meals, I :faint:

Everytime buy the same ingredients from mkt - just vary the cooking style.

Once a while, see sth interesting (like this morning peanut roots) in mkt, menu changes liao.

Check out ideas by browsing in Popular πŸ˜‚ or watching TV program.

This afternoon, I saw sth very interesting - Baked eggplant. The Korean chef halves the eggplant lengthwise, then quarter it, then cube it. Cook in pan with some salt. Dish up, mix with sth (like cube cheese) and an beaten egg. Shape into a ball. Do an egg bath, coat with breadcrumbs, send to oven. Serving: lay tomato puree on the plate, put the baked eggplant on the tomato puree, make a cream sauce and pour over the eggplant.

BUT I did not pay attention to what goes into the shaped eggplant 😒

I uploaded the pic into photobucket.

I bought 1/2 kg, after discarding the leaves/stems, left only what's on the plate.

              Jennifer,

How did you wash the peanut roots? I can wash more than 10 times and yet still look very dirty.

I will soak them for an hour or so, then will wear shower gloves to give them a good rub. Find this is the easiest way and can cut short my standing time by the sink.

                    Funz:

Amazing. Your dinners are all like 5-6 dishes. How do you finish all the food? Mine are usually 1 meat/fish, 1 vege and 1 soup. That's it. If I cook stew, it will be that 1 dish with a staple.

The meat and fish portions are not big.

My elder boy now can eat more, so hubby rather I cook more than to have insuficient food.

Hubby is used to seeing > 1 meat, > 1 seafood, > 1 veg and a big pot of soup in his mum's place. Mine is considered peanuts liao :rotflmao:

I only cook 1 cup of rice. So I prepare another carbo dish like potatoes.

I don't bother with soup, and fish is counted as 'meat' in my home. And I would put the chicken, potato and veg in a single dish. Also, how can your family just manage on 1 cup of rice? My family of 4, with 2 girls aged 13 and 16yo, needs 2.5 cups of rice for 1 meal! (by the way, none of us is overweight!)

1 cup of rice is > sufficient for my children. I am not eating rice for dinner. Hubby was not home for dinner either.
