Maybe look online for ideas? Or look at what goes into the ready-made sauce and adapt from there? I tend to just throw in whatever I feel like at the moment - no recipe! I adjust as I cook. I read somewhere that salt (or something that includes salt) is the most important as it tenderises the meat.

She said to me 20yrs ago, if I can’t cook well never mind, just remember 3 ingredients:
酱清、麻油、胡椒粉
Light soya sauce, sesame oil, pepper. Good for marinating all kinds of meat & sliced fish fillet -
For marinating, I use mainly soya sauce, pepper and salt.

I don’t follow any recipe too. Usually any of those ingredients…salt, pepper, sesame oil, soy sauce, ginger (these usually when make meatballs) crushed garlic. Sometimes add cumin, lemongrass, cajun…I sprinkle while grilling the meat. This week I grilled lamb and pork slices…I just sprinkle some salt and cumin. Sometimes it can be just meat itself with little salt.
