      I mix burdoch, radish and fresh mushroom, all throw in and boil. Mushroom normally goes in last, depending on how soft you want it and what type you are using. No meat used in this soup. Sometimes I add carrots.

        I normally use shitake and golden mushroom, sometimes abalone mushroom in place of shitake

                  Soup

                  Each morning, scald the chicken/pork in hot water.
                  Put meat and all other soup ingredients in bowl. I use a large and wide Corelle bowl.
                  Pour boiling water over the ingredients to speed up the cooking time.
                  Place Corelle bowl in Tiger thermal pot. Cover with a large flat plate (acts as a base for the upper layer).

                  Rice (for my 9mo boy and 3.5 yo girl)
                  Wash rice in small Corelle bowl.
                  Pour boiling water to speed up the cooking time.
                  Place small Corelle bowl above large flat plate.

                  => I have 2 bowls/layers in my thermal pot. 1 for soup (bottom) and 1 for rice (top).

                  Final step
                  Fill thermal pot with hot water. Start to boil over fire for 10 min.
                  Transfer to outer pot.

                  When I come home at 6.45pm, I’ll scoop rice and some soup for my 9mo boy, cut fish (which I would have thawed in the AM), vege etc and place in small Corelle bowl, steam in rice cooker. Once almost cooked, remove, cool a while then use hand blender to puree it. Continue steaming. Dinner’s ready for baby boy!

                  For 3.5 yo girl, use a pot to boil the soup, add remainder of rice and cut fish, vege, straw mushrooms, tomatos etc, and voila, 1 pot meal for her.

                  Note: If you intend to boil the rice in soup, note to add less water in the morning when cooking. Also, you can use the soup to make udon or cu mee fen for variety. Since I cook a different soup each day of the week, my girl doesn’t get tired although I use largely the same ingredients (caixin, fish fillet, straw mushrooms).

                  After tweaking here and there, I have come up with the above to (a) minimize cooking time and (b) reduce utensils used.

                  Based on above, I only need to wash up 1 Tiger thermal pot, 1 rice cooker, 1 pot, 2 Corelle bowls, 1 large flat plate and miscellaneous utensils. It does add up, but its an improvement to when I just started.

                    What is borlotti and cranberry bean? Are you using the beetroot that is found in the supermart, then the whole pot of soup will be red?

                      Hmm, have not tried beetroot in a clear soup before… But handling beetroot is always messy. Will try this recipe, thanks prata queen
