Thanks jtoh! I only have a question left for now…when the recipe calls for milk powder, which brand do you home bakers use?

I had that same question too. You can get milk powder from phoon huat or just any from the supermarkets. The recipes use only a tablespoon or so, so it really doesn’t matter the brand.

I highly recommend a BM :). It's easy and convenient to use. Just pour all the ingredients in the pan and after 3 - 3.5 hours, you will get a fresh loaf of bread.

I’ve been trying to make 100% wholemeal bread with no sugar on my Kenwood BM450.
However, everytime it comes out to be heavy. The bread inside itself is dense but not hard. I followed Kenwood recipe Program 3 but all the time it came out not being fluffy and light.
Anyone has experience with Kenwood to deliver a good light and fluffy 100% wholemeal bread? Can share your experience? -

Why don't you try other recipe not from kenwood? I don't use the recipe given by the BM maker & my wholemeal bread tastes great but my recipe has sugar & not 100% wholemeal. Hi everyone…am new here and just bought the Kenwood BM366 from Taka 2 days back.
Followed provided recipe to bake white loaf and taste and quality so-so…not fragrant and yeasty smelling even though followed instructions to a T.
After baking, no dome-shape on top…mildly sunken. Sides and bottoms are nice though.
Am now trying out tangzhong method today…wish me luck.
Will post maiden bakes later and hope to get advice from gurus here… -
Good luck with your bread. Tangzhong should give you a softer bread.

Btw, try half wholemeal and half bread flour to get a lighter bread like what Flowermonaster said.
