              Finally found my old home πŸ˜†


              Made my maiden cheesecake.

              Everything started off as planned. Crust was made and baked. Result seemed ok. Next, started to prepare the ingredients for the filling. Lemon zest (not quite enough), lemon juice, egg white separated from yolks, all done. Quite happy that I didn't break any yolk. Started beating the egg white to stiff. Stopped the mixer a few times but couldn't seem to see any peak. Continue beating... Still couldn't see any peaks. Hack, I used my finger to scope out a little. Looked stiff to me. Better stop beating.

              Up next was to prepare the batter. Everything was fine up to this stage. Or so I thought... The last part was to fold in the egg white into the batter. I proceeded to scope the egg white and it fell off from my spatula. :scared: the egg white seemed to have lost some volume. πŸ˜“ I scoped further.. Oops bottom was watery?! :shock: I had under beaten the whites? Couldn't be, I beat for quite some time. Ok, maybe I go beat some more... Result: :yikes: the whites continued to shrink! :nailbite:

              Intuitively I just off the mixer and dumped everything including the liquid egg white into the batter. Now, that was probably the wrong thing to do, the egg white was floating on my batter and couldn't be mixed properly. :gloomy:

              Couldn't do much about the floating egg white, I put the batter into the oven and thought for a moment if I ought to use water bath. The cheesecake was going to be a failure, didn't make sense to still bother with a water bath. Look at how lumpy the batter was.

              The cheesecake after 1 hour in the oven. Oh no! It looked too well-done. The middle supposed to be wet looking but this was like almost dry?!!

              After another hour cooling in the oven, it was beginning to look promising.

              Another 30mins later... I removed the pan side cover. :xedfingers:

                      Yum!

                      Much to my surprise, despite over-beating the egg white and over-baking the cheesecake, the cheesecake turns out delicious! What a forgiving recipe. πŸ˜†

                        Thank you, Integer. The cheesecake texture was rich and creamy. Quite perfect for me. The base was a tad too sweet though. Next time can reduce sugar and the amount of digestives as I find it a little too thick. The recipe is for a 26cm pan. Mine is slightly smaller at 25cm.
