My DS is another one of those kids who like veg and fish. His fav are broccoli and salmon. Or fish soup with noodles and pak choy.
I didnโt โtrainโ him. We just let him sample whatever we are eating (with the exception of spicy food). He developed his own likes and dislikes. -

EUREKA :celebrate:Actually, I enjoy making sweet potato and eggplant crisps for my kids.
What I usually do:
1. thinly slice sweet potato and eggplant
2. place baking paper on baking tray
3. spread sweet potato and eggplant slices on baking tray
4. drizzle with EVOO (extra virgin olive oil)
5. sprinkle sea salt and a squeeze of lime (or lemon)
6. add finely chopped oregano or rosemary (or any other herbs of your choice) - this step is optional. If lazy to finely chop the herbs, then just place a sprig of the herb over the sweet potato and eggplant
7. put in oven and bake for about 20-30 mins until crisp
End result - it looks like Lays potato crisps. Tastes yummy and healthy. :lol:
Best of all, no slimy, gooey taste!! :roll:

I tried it today. It was GRRRRRRREAT.
I used sweet potatoes from Indo, the ones selling at NTUC are nice and sweet. I cut them into really really thin slices and used olive oil and the no-salt garlic and herbs spice from MaCormicks :drool: :drool:
The crispiness was just nice, only drawback was it was a tad too oily for the 1st batch. The 2nd batch was better.
And yes, I am quite happy having them as munchy snacks for movie nites.

My dd also doesnt like to eat her vege, esp. the green leafy ones and cabbage. even when I cut them up into tiny pieces, she will still be able to pick them up from her rice or spit out from her mouth. :roll:
The only vege she will eat are carrots, brocoli and beans. DH and I eat our vege religiously, dunno how she got the dislike from. wonder if there is any other way to make her like her greens.

Here's another vege recipe. Very easy to make. This one's on Portobello Mushrooms :lol:
1. Line baking tray with baking paper (big piece of paper as you need to wrap the mushrooms with it later)
2. Lay some portebello mushrooms on the lined baking tray (does not matter if you get the big or small mushrooms - depends on your preference and what is available at the supermarket/ market)
3. Drizzle virgin olive oil over the mushrooms
4. Sprinkle a pinch of sea salt
5. Sprinkle shredded mozerrella cheese over the mushroom (this step optional; can omit if u don't want cheese. It will still taste just as good)
6. Put a spring of herb (your preference, it can be rosemary, tarragon or omit the herb if you wish. My personal preference is rosemary but really, it's what tickles your taste buds)
7. Fold paper and wrap the mushrooms with the baking paper until it forms a \"parcel\". For info, make sure that ends of the baking paper is folded down and under the mushrooms.
8. Pop into the oven at 180C for about 20-30mins.
9. Unfold the paper gently. The mushrooms cook in its own juices and there will be a layer of mushroom juice which you can spoon over mash potatoes or roasted meats or even rice/pasta.
10. Serve and enjoy :drool:
ps... you can also use aluminium foil instead of baking paper. Works just as effectively too.

haha, also used sweet potato to smuggle in some broccoli into DD's diet. Steamed small sweet potato (thinly sliced) and finely chopped broccoli. When cooked, mashed with little bit of EVOO and serve. Tasted like \"or nee\", that gooey sweet oily teochew dessert. Scrumptious! And little to clean up too
