    Prawn batter - how to make it stay crispy after sometime?

        (our very own) Schweppes gingerale/beer ๐Ÿ˜„

        The other day, DH and I substituted asina china apple (zhong guo ping guo) for beer in our fried chicken batter, very nice ๐Ÿ˜„

        Here's a simple recipe for beer (carbonated drink) batter, you can use if for fish & chips, onion rings, chicken, tempura veggies:

        Ingredients
        1 cup flour
        3/4 teaspoon baking powder
        1/2 teaspoon salt
        1 egg (beaten)
        beer (carbonated drink of choice) to mix
        tempura batter mix

        Directions for batter
        1. Stir together flour, baking powder and salt.
        2. Make a well in center; add beaten egg and beer/drink slowly, whisking to make a smooth batter.
        3. Let stand for 20 minutes.

        Directions for frying
        1. Dip fish/chicken/veggies/onion rings in batter.
        2. Coat fish/chicken/veggies/onion rings with tempura mix.
        3. Fry, cool and/or enjoy them (hot from the pan) ๐Ÿ˜„

              Adding rice flour also helps make it more crispy. I do that for my har cheung kai (prawn paste chicken).

                      The fizzy/carbonated canned apple drink from China? Erm \"zhong guo ping guo\"? Yellowish/gold can with a little black background and a red apple? Sorry I'm at work, can't upload a pic of the can FYI.
