      But how to do make the paste inside.. both the peanut and the bean paste.

        Didn't take pics leh but they looked exactly like Funz's muffins above. Only diff was the paper liner. šŸ™‚


        I will make them again for Christmas as a small takeaway for guests. But this time I will throw in Hershey's choc chips instead of Nutella. The Nutella gave me a weird after-taste. Maybe my bottle was expiring next Feb?

        My hubby commented the texture of the muffin was soft and spongy, similar to the \"Chocolate n Spice\" (Shunfu) muffins...

              You can try this method :
              Filling:
              300g dried mung bean
              200g sugar (suit individual taste, may add more or less)
              3tbsp cooking oil


              Steps:
              Filling:
              1. Soak mung bean overnight and steam for 35 to 40mins until soften.
              2. Blend immediately until fine paste.
              3. Heat a wok and fry paste, sugar and oil until sugar dissolved and slightly dry.
              4. Dish out and leave to cool. ( You can prepare this in advance and keep in fridge.)

                Hi Thanks for sharing, would definitely give it a try. Love baking!! I always bake with my children. They love it and they would share with their friends. this christmas we baked some gingerbreadman and would be giving it away as presents.
