If I'm not wrong, she will cook the potato together with the rice.
She'll mash and fry the luncheon met under low heat to make it abit crispy and also get the oil out. Add in the cooked potato and crush and mix with luncheon meat.
Fry the mix for a while and flatten and then add the whipped egg.
That simple!
I modified to potato strips with cubed sausage. The children love it. -

At the departure hall West Wings, the Aji Ichiban shop is right in front of the escalator that goes down to Gate 33 to Gate 81.
But you don't have to buy it in the airport, they have many outlets all over HK. -
