        My attempt at re-creating the squid ink sauce pasta that DH and I liked so much after having it at a cozy Italian restaurant in Australia. Ok, not everyone's choice of meat, but DH and I are hooked.

        The taste was close but looks wise, a far cry. Not the inky black that I would like as I could not get enough ink out of those sotong. And I think I should have used tomato paste instead of chunky tomato for the sauce.

          Oh..finally I have another person (Funz...a great cook) to come into this thread to share her dishes and I do hope many more can come in to share interests and of course recipes!!! Post Dishes with pics can descript a thousand words :lol:


          Funz, nice attempt on the squid ink pasta but I am not squid fan but I would love to try Suan Pan Zi :lol:

          Mee Siam last weekend. Std and taste are not up to my mil as well as one of my fren's mum....\"something\" is missing in the soup....need to figure out from the real Sifus...nevertheless, we still finish up the whole pot 😉

              My simple version

              Ingredients
              Abt 300 grams of spaghetti
              ~5 cloves of garlic finely minced…Have more if you prefer more
              3 tablespoons of extra virgin olive oil
              1 - 2 teaspoon of dried chilli flakes
              Pinch of salt and ground black pepper
              Afew slices ham (Abt 100g), diced or julienned or any topping of your choice
              A pot of water with salt added (for blanching pasta noodles)


              1) Boil a pot of water, add salt. When boiled, place pasta and cook per packet instruction (depends on type of pasta used), or until al-dente. Remove from pot and drain well. Mix pasta noodles with 1 tablespoon of olive oil, coat well to moist the strains while reserving for later.

              2) Heat large sauce pan/ wok with 3 tablespoons of olive oil over low-medium fire. Add in minced garlic and sauté till fragrant will do. No browning is required.

              3) Place ham slices into the frying pan, stir-fry for seconds then add in blanched pasta into frying pan and add in chilli flakes, salt and ground black pepper, stir-fry to combine well. Toss the noodles during stir-frying process, to avoid over-cooking.

                We have Vietnamnese Dinner tonight.

                The spring rolls are frozen ones which my Viet's friend gave a pack to me. These serve as the starters...I marinated the Pork Chop in Vietnamnese style. Hubby had his Pork Chop rice while I made my Bun Thit Nuong (Pork Chop with Vermicelli) top with Nuoc Mam Pha (Fish sauce)

                We finis off with our favourite Jasime tea with lots of Logan meats, seedless red dates and wolfberries to \"try\" get rid of the \"Oil / fats\" . Haha

                        I cant remember which website did I get this recipe..
                        600g of pork chop
                        3 cloves garlic, minced
                        1 large shallot, minced
                        2 tsp fish sauce, add more to taste
                        2 tsp sugar, adjust to taste
                        1 tsp salt, adjust to taste
                        1 tsp ground black pepper

                        As for tea....I simply throw in the \"ingredients\" with boiling hot water and let it brew...light sweetness and refreshing drink after a heavy meal..its good, try it
