        Hakka Yong Tau Foo learned to cook from my MIL. My first attempt with great success! My DH's favorite, whenever he miss his mum's cooking, I will cook this for him! My DH said it tastes as good as his mum's! :love:

          Hi Ting Ting,

          The recipe is based on estimation as my MIL don’t use measuring device. I got modified a bit for some quick fix. Here it goes.

          Mixed meat about $4 -$5 from wet market
          Fish paste 2 cups from NTUC
          Tau Fu big one about 8 pcs (cut holes in middle, do not throw away the cut portion, k cook together don’t waste)
          Chilli big ones about 8 ( cut open in the middle, do not remove stalk just remove the seeds)
          Bitter gourd 6 (optional) (cut a hole n remove the middle part)
          Taucu (豆酱,兰花牌)1 to 1.5 spoonful
          Minced garlic
          Salt
          Pepper
          Oyster sauce 1 spoonful
          Thai basil 8 to 10 leaves (optional)

          Steps
          1) mixed minced pork, fish paste, pinh of salt & pepper well
          2) Stuff the mixture into the Tau Fu, chilli & bitter gourd.
          3) Fried the them & remove from wok when outside golden. Don’t over fried chilli & bitter gourd.
          4) put a bit oil, fried minced garlic but don’t brown it. Then put bean paste, oyster sauce n water. Water estimate must reach brim of fried Tau Fu, chilli & bitter gourd. If not sure don’t put too much water first. Put in the fried stuffs then add some more water if not enough. Let it cook or 5 to 10 mins. Taste the soup n see if it’s to your taste. You can add more bean paste or oyster sauce if you need to adjust the soup based. As I only use the bean paste from Malaysia, I am not sure if using other brand will affect the outcome. The brand I am using is not so salty.

          Lastly, add basil leaves n let it simmer for a while, cover the wok for a while & it’s ready to be served. Just eat with white rice.

            Can i have the recipe for Loh Mai Gai? for the Loh Mai, need to steam first right? i saw fr a recipe book, need to wash the loh mai first, filter out the water and steam, mean steam w/o water? need to steam how long?

            I half all ingredients to make 6 big bowls.

            1kg glutinous rice, wash clean and soak for 4hours (do not need to soak overnight)

            Marinate chicken and mushroom
            20pcs Chinese dried mushrooms (soak in water to shorten, rinse few times)
            650g of debone Chicken, cut small pieces
            2tbsp ginger juice
            1 and ½ tbsp oyster sauce
            1tbsp light soy sauce
            1/2tbsp Chinese cooking wine
            1/2tsp salt
            1/2tbsp sesame oil
            1/2tsp white pepper powder
            2tbsp cornstarch or tapioca flour

            Seasonings for rice
            4tbsp shallot oil
            1/2tbsp sesame oil
            2tbsp oyster sauce
            3tbsp light soy sauce
            3tbsp dark soy sauce
            4tbsp sugar
            2 and 1/2tsp salt or to taste
            1/2tsp white pepper powder
            800ml water

            2 Chinese dried sausages , sliced and pan fried, set aside (optional)

            Method

            1. Rinse and drain chicken in hot water.
            2. Mix all seasoning with chicken and mushroom in a bowl, set aside for 1 hour.
            3. Mix all seasoning and water with drain glutinous rice in a rice cooker.
            4. Cook glutinous rice in rice cooker and fluff the rice with a fork when rice is cooked.
            5. To assemble Lo Mai Kai- place 1-2 pcs of chicken, mushroom and sausage in a aluminium bowl. Cover with steamed glutinous rice.
            6. Cover and steam Lo Mai Kai over medium high heat for 30mins.
            7. Turn out Lo Mai Kai on a plate and serve hot.

                      Lettuce
                      Carrot
                      Or
                      Whatever veggie that can be eaten raw :boogie:

                      Put everything together and eat! Skip the dressings for best effect!

                        Try making smoothies consisting a variety of fruits and raw organic leafy greens all in one blend. You will be amazed how filling and nutritious it can be as a cooked meal substitute. Fast and convenient too!
