For lunch at Fantasmic package - We ate at Mama Melrose. Do consider to order Fish of the Day, steak, flatbread (like pizza) etc. IMO, you may skip the pasta.
For Universal Studio - onsite resort booking.
You can book at Cheaptickets website. Wait for 20 or 25% discount code. Book using 2 adults only as kids under 18 stay free. If you book at 2 adults 2 kids, you are charged for 4 people price. I saved more than $200 USD.
I bought my Universal park tickets from Undercover Tourist. You must buy the tickets under this website http://www.mousesavers.com Click on its link to Undercover Tourists to get your park tickets. If you buy directly on Undercover Tourists, the discount is not as much. With this arrangement, I also saved around $ 130 USD because the promo was for Pay2days for 3days tickets to Universal Studio.

I must thanks everyone especially Dnls-mum for their valuable advice. We enjoyed our trip very much!
Here are some thoughts after my Dec trip.
1) Try to go during low crowd level such as week before Thanksgiving and first 2 weeks of Dec.
2) Understand the trend for past Free Dining Period. Free Dining is most cost effective for 2 adults and 2 kids at moderate resort.
3) If you are not able to get free dining, then…please do not buy meal plan! It was seriously a lot of food!
4) If you are unsure of how many days ticket to buy, please get minimum and you can add day tickets at any guest relations at WDW before you use the last day ticket.
5) There are many resorts to suit any budget. The advantages below justify the cost to stay in a WDW resort (onsite). For Value - POP. For Moderate - Port Orleans French Quarter.
6) Bus Transportation is very efficient. We didnt have to wait more than 15mins for any bus. You do not need to worry about parking your car at each park. Even if you need to park the car at the park, the parking is FREE which otherwise cost $ 16 for offsite guests.
b) Fastpass booking is at 60 days for onsite guest. Fastpass booking is at 30 days for offsite guests
c) Currently for Be Our Guest Lunch Restaurant - only onsite guest can make reservation using Resort Reservation ID using a link. It is almost impossible to walk in on BOG lunch even though it is a counter service.
d) Extra Magic Hours for onsite guests
7) At 180days mark, make Advance Dining Reservation ADR! Starts with the furthest date for the hard to get reservation. You must have a reservation for all table service restaurants. It is a must even if it is a low crowd level.
At 60days mark, make Fastpass. Depends on whether you are "commandos’ or not, if you are not morning riser and does not plan to do Road Drop, then plan FPP later in the early afternoons where queue will be the longest.
9) I love Downtown Disney! It was so cosy and beautiful in Dec. Please plan 1/2 day here or after a park day - you can come here for Dinner!
10) Have afternoon rest in resort or plan a free day to relax in your resort
11) PLAN a Hotels Hopping Day. We ended 1 evening, taking the ferry at MK to Fort Wilderness. The decor and lighting was so beautiful. It is gorgeous beyond words. If only I had known about the cabins, I would definitely stay here. We had lots of fun having Marshmallow, sing-along session with Chip & Dale and a movie night.
12) If your kids are riders, then plan Universal Studio/Island of Adventure after WDW. Stay onsite to FREE Unlimited Express Pass. We stayed 5 nights and spent 3 days in the parks.
13) Buy Memory Marker and Photoconnect at both WDW and Universal.

Appreciate some advise on the transportation around Orlando. We are staying onsite at WDW and US and finally Drury Hotel. Transportation from airport to WDW is ok as there is the Disney Magical Express. Headache is from the Drury Hotel back to Orlando airport - we are not doing self-drive - any reliable shuttle coach contacts?

Off-Peak Early Park Admission
Effective Tuesday, September 2, 2014, only Universal Studios Florida’s front gates (and not those at Islands of Adventure) will admit eligible guests for early park admission during the off season. Despicable Me and the Diagon Alley attractions will be open at USF during early entry.
The Hogwarts Express train from King’s Cross Station will not begin running to The Wizarding World of Harry Potter - Hogsmeade in Islands of Adventure until both parks have officially opened for the day.
There is no announced date as to when the "off season" for early park admission will end, but it seems safe to assume that two-park early entry may return for the busy Thanksgiving and Christmas seasons. -
